Usually ready in 24 hoursThe cut Brazilian steakhouses built their reputation on — and the fat cap is the entire point, so don't trim it.
Why You'll Like It
- The fat cap renders down and bastes the meat as it cooks — nothing else needs to be added
- Plenty of marbling makes it juicy and savory even cooked hot and fast
- Roast whole in the oven or smoke it slowly, then slice against the grain
- About 4 lb — a proper centerpiece roast
Best For
Churrasco-style grilling, feeding a crowd, and anyone who has had picanha out and wants to cook it at home.
Details & good to know
Details
With plenty of marbling, this is a juicy and savory roast. Best roasted in the oven or smoked slowly on the grill. Average weight 4 lb. Vacuum-sealed and frozen.
Good to Know
Leave the fat cap on — score it, don't remove it. Trimming a picanha defeats the cut. Ships frozen; local pickup available.

Warranty & authenticity
Grade, aging & freshness
Grade
Our beef isn't USDA graded. Judged on marbling, it lands in the High Choice to Prime range.
Finish & aging
Our Angus cattle finish on grain for about 150 days, and the beef is dry-aged 10–14 days before it's cut. That's where the deeper flavor and tenderness come from.
How it's packed
Every cut is vacuum-sealed and frozen solid at the shop. Shipped orders go out in an insulated cooler box with dry ice (extra dry ice for the farthest states), Mondays and Tuesdays only.
When it arrives
Unpack it right away and put it in the freezer. Vacuum-sealed and kept at 0°F, it holds its quality for up to a year. Handle dry ice with gloves and let it evaporate somewhere ventilated, never in a sink or a closed container. If anything arrives warm, email us a photo the same day.
Shipping & returns
Free frozen shipping on beef orders of $350 or more. Under that, frozen shipping is a flat rate by weight and distance, shown at checkout.
Where beef ships: anywhere in the lower 48 states, plus Washington, D.C. Every box goes out frozen solid in an insulated cooler box with dry ice. We can't ship beef to Alaska, Hawaii or APO/FPO addresses.
When it ships: Mondays and Tuesdays to Texas, Oklahoma and nearby states; Mondays only to everywhere farther out. That way a box never sits in a carrier's warehouse over a weekend.
Local pickup at 117 S Main St, Seymour is free. We hold your order in the freezer until you come by, so bring a cooler if you've got a drive.
Final sale. Frozen beef can't be returned once it leaves our freezer. If a box arrives thawed or damaged, email us a photo the same day and we'll make it right.

Warranty & Authenticity
Every product we sell comes from an authorized distributor — GSM Outdoors, Chattanooga Shooting Supplies, or direct from the brand. Nothing is grey-market.
Warranty terms are set by each manufacturer and vary a lot — Phenix covers rods for the original owner's lifetime, Walker's is one year, Boss Buck is 90 days. The exact terms for whatever you're looking at are in the Warranty & authenticity tab on that product's page. If a claim comes up, email us and we'll help you file it.
